I know it’s hard to imagine but it’s chilly in South Florida Again! How dare Mother Nature! LOL Two Cold snaps in a row??? Unheard of… (tongue in cheek). OK enough of the sarcasm. Well what does a cook do when it’s cold outside? Make something to warm you up, of course.  Chicken Gnocchi Soup is just the thing to do just that!

Instructions

  • 1. Heat Stock Pot on Medium High heat, add Olive oil, Onion, Garlic and Red Pepper. Saute until onion is translucent.
  • 2. Add Diced Chicken. Saute until Chicken is starts to get color and no pink appears on the outside.
  • 3. Add Celery, Carrot, Thyme & Bouillon powder. Saute until veg are incorporated
  • 4. Add 1 1/2 Quarts Chicken Stock. Bring soup to a boil, scraping bottom for renderings
  • 5. Once boiling, cover and reduce heat to Medium . Let simmer 10 minutes (set a timer). After 10 minutes add Greens and simmer 5 more minutes.
  • 6. Come back and add Gnocchi. Stir through and Cover. Simmer for 10-12 minutes. When you come back the Gnocchi should have risen to the top and the stock reduced a little.
  • 7. Add remaining stock, stir through and taste. Does it need Salt and/or Pepper? Cover and simmer on Low for 30-45 minutes

    **Note: If this is "too big" a pot of soup for you, iremember: Any leftover soup can be frozen or can be thickened (add a cornstarch slurry) for a nice hearty Chicken and Dumplings! Enjoy!!
