Blueberry Monkey Bread

Instructions

  • 1. Prepare Blueberry Filling
    Place 1 cup of Blueberries and Sugar in a saucepan on medium low heat.
  • 2. Simmer and stir until blueberries liquefy and sugar melts. (about 5 minutes)
  • 3. Combine cornstarch and water.
    Add to the blueberries.
  • 4. Cook over medium heat until mixture comes to a full boil and has thickened.
    Add butter and stir to combine.
  • 5. Pour hot filling into a bowl to cool to room temp.
  • 6. Fold in Remaining Blueberries & Lemon.
  • 7. Set aside.
  • 8. Pre-heat oven to 350°
  • 9. Grease ramekins with melted butter.
  • 10. Beat eggs and milk together. Add remaining melted butter. Set aside.
  • 11. Combine Brown Sugar and Cinnamon and pour in a bowl of their own. Set aside.
  • 12. Remove biscuits from their packages. Cut each biscuit into 4 pieces.
  • 13. Dip the biscuits into the egg mixture and then dredge through the brown sugar.
  • 14. Places 3 pieces into each ramekin bottom.
  • 15. Pour 2-3 tbsp of the Blueberry filling over the biscuits.
  • 16. Top each ramekin with 3 more pieces of dredged biscuits.
  • 17. Top with Blueberry mixture.
  • 18. Line a Baking sheet with parchment and place the ramekins on the sheet pan
  • 19. Bake at 350° for 30 minutes or until golden brown.
    **Do not be surprised if it looks as if it has exploded, the biscuits triple in size!
    Top with Whipped Cream and enjoy!
